Homemade Banana Walnut Bread
Hi lovelies! This past week I had a bunch of bananas getting overripe and if there is anything I’ve learned from my mom it is “when bananas go bad make banana bread.” Clearly, we have bananas go bad quite often in our household.
So as I was getting ready to put on my apron and get baking, I decided I would pull out my camera and share this awesome recipe!
Here are the ingredients you will need: (Makes 2 loaves or 12 mini loaves)
2 1/2 cups Flour (unbleached)
2 teaspoons Baking Soda
1 teaspoon Salt
4 Eggs (room temperature)
1 teaspoon Vanilla Extract
1 cup (2 sticks) Unsalted Butter [softened]
2 cups Sugar
6 Very Ripe Bananas (peeled and mashed)
1 cup chopped Walnuts
Pre-Heat your oven to 350 degrees F.
Step 1:
Sift together the dry ingredients: flour, baking soda, & salt.
Step 2:
In a separate bowl, whisk the eggs and vanilla together.
Step 3:
Prepare your loaf pans by buttering the sides and bottom or coat using a non-stick cooking spray.
Step 4:
In a large bowl (you can use a hand-held mixer or use a standing mixer-I used a hand-held mixer) cream together the butter and sugar until light and fluffy.
Step 5:
Slowly add in the egg mixture until completely mixed.
Step 6:
Add in the bananas. If your mixture looks funky and curdled- don’t worry! It is supposed to look like that.
Step 7:
Remove from mixer (or remove hand mixer). With a spatula, fold in the flour mixture until completely mixed.
Step 8:
Fold in the walnuts.
Step 9:
Bake in the oven for 55 minutes or until an inserted toothpick comes out clean. (If you are using the mini loaf pan like I did then cook for 15 minutes. After 15 minutes rotate the pan and cook for another 15 minutes.)
Step 10:
Once the bread is ready. Take out of the oven and set it out to cool for 5 minutes. Then carefully take the loaf/loaves out of the pan and let cool completely.
